The Kotai Cleaver features a broad blade, ideal for cutting large portions of meat, preparing spare ribs, or quickly chopping hard vegetables without tiring your wrist. This sharp, handmade knife is made of rust resistant, Japanese stainless steel, offering chefs the perfect blend of balance and control in the kitchen.

The Pakka collection features handles crafted from a single piece of black pakkawood. This stabilized wood offers a secure grip, water resistance, and aging resilience. The hand-polished, round handles ensure a comfortable grip, even with wet hands, catering to both right-handed and left-handed chefs.

The Tsuchime finish involves hammering the blade of the knife to create a unique pattern on the surface. The hammered pattern creates tiny pockets of air between the blade and the food. This ancestral Japanese method reduces drag, thus preventing food from sticking to the blade.

The Pakka collection features hidden full tang blades, extending to the bottom of the handle for enhanced durability and balance.
